In this tutorial, A.J. demonstrates how to switch Photoshop CS5 between 64 bit & 32 bit modes.
If this isn't working for you, make sure you are selecting the Application icon, not the Folder. You won't see the option if you Get Info on the Photoshop folder. In the video, I open the Photoshop folder first, then right-click the Photoshop application icon.
Thanks to @JoeyRoxville who added in the comments if Photoshop is in your Dockbar you can right-click (CTRL+click) the PS icon and choose Options-Show in Finder which will bring you directly to the application icon.
CS5 on Windows installs both the 32 & 64 bit versions. You'll find Photoshop 32 bit under the x386 folder. Go to C:\Program Files (x86)\Adobe\Adobe Photoshop CS5 You'll want to start PS in 32 bit mode first, then use File-Open to get images. Any images you double-click to open will launch PS in 64 bit mode.
